Please forgive me, but I'm a bit old fashioned. If I shake your hand then we will honour the deal: it's that simple. Of course we'll write it down because that's what modern business demands. However, if we shake hands and we've made a mistake then we will honour what we said, and hopefully learn from the mistake. We don't understand the concept of reneging on a deal. We want long-term business partners in a relationship where both of us make money.
